almond light fruit cake

with the weather the way it has been I got a longing for some xmas cake'this is my cousin Betsy's recipe that has been in her husbands family forever. 1 cup of butter 1 1/2 cups of white sugar 6 eggs (add one at a time) 1/2 cups of milk 3 1/2 cups of flour 1 tsp of salt 3 tsp of baking powder 1 lbs. of light raisins 8 oz. of glazed red and green cherries (cut in half) 4 0z. of glazed pineapple 1 tsp of vanilla 2 tsp of almond extract 1 tsp of lemon extract bake in a greased 5x11 pan or any pan or pans that measure equal space bake at 300 degrees for 2-21/4 hours

Butter cookies

1 cup butter 1 cup sugar 1/4 teaspoon salt 1 1/2 teaspoons vanilla 1 egg, unbeaten 2 2/3 cups flour Using an electric mixer at medium speed, cream together butter and sugar, adding sugar gradually. While mixing, add egg, sprinkle in salt and vanilla. Beat well to combine. Stir in flour and mix only until flour is incorporated - do not over mix. chill 2-3 hours and used as a roll dough . Place on ungreased cookie sheets, sprinkle with sugar,or press the center and put your favorite jam or jelly in the center and bake in a pre-heated 375F degree oven and bake 10 minutes or until edges are golden. Remove to wire rack and allow to cool.

white bread

INGREDIENTS 2 cups warm water (110 degrees F/45 degrees C) 2/3 cup white sugar 1 1/2 tablespoons active dry yeast 1 1/2 teaspoons salt 1/4 cup vegetable oil 6 cups bread flour DIRECTIONS In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam. Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise until dough has risen 1 inch above pans. Bake at 350 degrees F for 30 minutes.

2 cups of flour 4 tsp. of baking powder 1/2 tsp of salt 2tsps. of sugar 1/2 cup of shortening 3/4 cups of milk sift dry ingredients into a bowl,cut in shortening until coarse crumbs make a well in center add milk all at once stir quickly with a fork turn onto a lightly floured surface roll or pat dough to 1/2 inch cut out biscuits bake on an ungreased cookie sheet 450 degree oven for 10-12 minutes depending on your oven

chocolate and brown sugar fudge

chocolate fudge 1 (7 ounce) jar marshmallow creme I didn't have the creme so I just added the mini marshmallows 2 cups 1 1/2 cups white sugar 2/3 cup evaporated milk 1/4 cup butter 1/4 teaspoon salt 2 cups milk chocolate chips 1 cup semisweet chocolate chips 1/2 cup chopped nuts 1 teaspoon vanilla extract DIRECTIONS: 1. Line an 8x8 inch pan with aluminum foil. Set aside. 2. In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly. 3. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. pineapple upside cake

1/4 cup butter or margarine 2/3 cup packed brown sugar 9 slices pineapple in juice (from 14-oz can), drained 9 maraschino cherries without stems, if desired 1 1/3 cups all-purpose flour 1 cup granulated sugar 1/3 cup shortening 1 1/2 teaspoons baking powder 1/2 teaspoon salt 3/4 cup milk 1 egg 1. Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice. 2. In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries. 3. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. cabbage roll casserole

1 medium head of cabbage (cut in quarters and steam for about 10 minutes) 2lbs of lean ground beef (brown the beef with garlic and onion) 1 small onion (chopped very fine) 1 clove of garlic (I use the frozen cube garlic) 1 cup of cooked rice 2 cans of fiesta soup 1 28 oz.can of whole tomatoes with herbs and spices mix the soup and tomatoes together chop the cabbage in pieces according to your choice layer on the bottom of glass casserole dish. Then a layer of the beef with the rice added in it add half the sauce then repeat the layer put in 350 degree oven for about an hour and a half.

Butter Tart Filling:Use your favourite pastry recipe for the shells or cheat like I do and buy the frozen tart shells 1-cup packed brown sugar 1/2-cup corn syrup 6-tbsp butter 2-beaten eggs 2-tsp vanilla 1/4-tsp salt 2-tsp vinegar 1-cup raisins Combine brown sugar, corn syrup, and butterAdd eggs, vanilla, salt, vinegar, and raisinsMix well Fill the pastry shells no more than 2/3 full Bake at 425* for 15-20 minutes

cinnamon rolls,/dinner rolls,

1/2 c. lukewarm water 2 tbsp of yeast2 eggs, 1/3 c. shortening, 1/2 c. sugar, 1 1/2 tsp. salt, 1 c. milk. 1/2 c. water. 5 1/2 c. flour Put yeast and lukewarm water in small bowl and set aside to dissolve. Beat eggs, shortening, sugar and salt together in large bowl. Scald (bring to a boil) milk and 1/2 cup water and pour over egg mixture. Add 3 cups flour and beat, add yeast, then the other 2 1/2 cups flour. Mix together, pour onto countertop and knead, then "spank". Let rise until dough reaches top of bowl. FOR DINNER ROLLS: Take 1/2 of dough from above. Roll into 3 inch balls and roll inward until dough is smooth. Dip each roll in melted butter and turn butter side up in baking pan greased with butter. Let rise. Bake at 400 degrees for 10 to 15 minutes. CINNAMON ROLLS: Take other 1/2 of dough and roll out until fairly thin. Spread with melted butter. Top with 1/4 inch layer of brown sugar and a layer of cinnamon. Sprinkle with water. Roll this up and cut in 3/4 ...

lasagna

2lbs. ground beef. 2 cloves garlic, minced. 2 tablespoons dried parsley flakes. 2 tablespoons dried basil. 1 teaspoon salt. 3 cans (14.5 oz each) whole tomatoes. 2 cans (6 oz each) tomato paste. **In a large skillet, brown meat with garlic, drain fat, add the next 6 ingredients. Simmer uncovered, 30 minutes. **Boil 12 lasagna noodles with 1/2 teaspoon salt and 1 tablespoon olive oil. Cook noodles al dente. **Combine in a bowl: 3 cups cottage cheese. 2 eggs, beaten. 1/2 cup Kraft Parmesan Cheese. 1 tsp salt. 2 tablespoons dried parsley flakes. Also have on hand:1 pound sliced mozzarella cheese. I would do 3 layers of the mixture. ASSEMBLY: Place 4 noodles in a baking dish. Spread half the cottage cheese mixture over the noodles. Add 1/2 pound of mozzarella slices, and a little less than half the meat mixture. Repeat the layers, ending with the meat mixture. slow cooker pot roast

SLOW COOKER POT ROAST 3-4 lb. roast. Salt & pepper to taste. 1/2 tsp. garlic powder. 1can of campbell's fiesta tomato soup. 1 pkg. Lipton onion soup. 1cup water. Place roast and all ingredients in slow cooker. Cook until tender, I usually cook mine about 5 hours on high.
