old fashioned sugar cookies

Ever year about a week from Christmas, My Sister and I go to Mom's to do our Christmas baking. We have been doing this for as long as I can remember. This sugar cookies recipe is from the 1940s. Cook Time: 10 minutes 3/4 cup butter, softened 1 cup white sugar 2 eggs 1/2 teaspoon vanilla extract 2-1/2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon nutmeg 1/2 teaspoon salt In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder,nutmeg and salt. Cover, and chill dough for at least one hour Preheat oven to 350 degrees F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets. Bake 6 to 8 minutes in preheated oven. "Super Easy" Chocolate Fudge

"Super Easy" Chocolate Fudge Makes 64, 1” squares (2.2 lbs (1 kg) 3 cups (750 mL) semi-sweet chocolate chips 1 can (300 mL) Regular Eagle Brand sweeten condensed milk 2 tsp (10 mL) vanilla extract 1/2 cup (125 mL) chopped nuts Melt chocolate chips with Eagle Brand milk on low heat. Remove from heat, stir in vanilla and nuts. Spread evenly in parchment paper-lined 8-inch (20 cm) square pan. Chill 4 hours or until firm. Remove from pan and cut into squares

Holiday Teddy Grams 1/2 cup of butter 2/3 cup sugar 1 egg 2T molasses 2 cup of flour 1/2 t cinnamon 1/4 salt -in a large bowl beat together butter and sugar until light and fluffy -stir in egg molasses and the rest of the dry ingredients mixing until combined -heat oven 350 roll out dough 1/4" cut with your favourite cutters place on a ungreased cookie sheet bake 8 minutes remove to a wire rack and cool completely before decorating makes 24 cookies

Pecan Tart

Pecan Tart 3/4 cups sugar 3/4 cups corn syrup 3 eggs 1/3 cups of butter melted 1/2 teaspoon of salt 1 or 2 cup of pecans Mix all together the sugar, corn syrup, eggs, butter, and the salt in a large bowl. Then add the pecans! Pour into an unbaked tart shell. 2/3 full Heat oven to 350 and bake tarts for 20minutes or until it sets in the middle. cool for an hour before eating!

almond light fruit cake

with the weather the way it has been I got a longing for some xmas cake'this is my cousin Betsy's recipe that has been in her husbands family forever. 1 cup of butter 1 1/2 cups of white sugar 6 eggs (add one at a time) 1/2 cups of milk 3 1/2 cups of flour 1 tsp of salt 3 tsp of baking powder 1 lbs. of light raisins 8 oz. of glazed red and green cherries (cut in half) 4 0z. of glazed pineapple 1 tsp of vanilla 2 tsp of almond extract 1 tsp of lemon extract bake in a greased 5x11 pan or any pan or pans that measure equal space bake at 300 degrees for 2-21/4 hours

TRADITIONAL SCOTCH COOKIES

TRADITIONAL SCOTCH COOKIES 1/2 cup cornstarch. 1 cup flour. 1/2 cup icing sugar. 3/4 cup butter, softened. Sift together cornstarch, icing sugar and flour. With large spoon, thoroughly blend in butter. Work with hands until soft, smooth dough forms. If necessary, refrigerate 1 hour or until easy to handle. Roll dough to 1/4 inch thickness; cut into shapes with cookie cutters. Decorate with candied cherries, coloured sprinkles or Icing, if desired. Bake in 300°F (150°C) oven 10-15 minutes or until edges are lightly browned. Remove and cool completely on wire rack. Store in tightly covered container. Yield: About 2 dozen cookies.

Cafe Mocha!!

This is just something quick to warm up your day! Cafe Mocha 3/4 tsp of instant coffee 5 1/2 tsp instant hot chocolate 1 1/2 cups boiling water splash of milk Mix coffee and hot chocolate in tall mug. Pour in a little bit of water and stir so there is no lumps. Add rest of water and splash of milk, stir again. Top with lots of whip cream! You don't need to follow the directions exactly, experiment!

Gingersnaps

3/4 cup shortening. 1 cup brown sugar. 1 beaten egg. 1/4 cup molasses. 2 cups flour. 1/4 tsp salt. 2 tspbaking soda. 1 tsp cinnamon. 1 tsp clove. 1/2 tsp ginger. Cream shortening and sugar. Add molasses and egg. Stir in sifted four, salt and soda, cinnamon, clove and ginger. Dough will be soft and a little sticky, roll into walnut-sized balls and roll in sugar. Place on Cookie sheet and press down with fork bake at 350 for 7-8 minutes.

Brown Sugar Fudge

This is my Sister's recipe Ingredients: 1/2 cup plus 2 tablespoons evaporated milk. 2 cups packed light brown sugar. 1 1/2 sticks (12 tablespoons) unsalted butter, cut into tablespoons. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract. 1 3/4 cups icing sugar. preparation Combine milk, brown sugar, butter, and salt in a 3-quart heavy saucepan and bring just to a boil over moderate heat, stirring until sugar is dissolved. Reduce heat to low and simmer, stirring frequently, until mixture registers 238°F on thermometer and a teaspoon of mixture dropped into a small bowl of cold water holds a soft ball when pressed between your fingers (this will take about 30 minutes). Transfer to a heatproof bowl. Beat in vanilla with an electric mixer at medium speed, then add the icing sugar a little at a time, beating until fudge is thick and smooth, about 5 minutes. peanut butter cups and peanut butter balls

3 T.butter 1 c. icing sugar. 1 c. peanut butter 1/2 c. brown sugar. 1 t. vanilla 1- 24oz bag chocolate chips 2/3 c. cooking oil Mix first 5 ingredients until it forms a large ball, make Patties by using a tablespoon form into a ball, pat down . melt chocolate and oil, line muffin pan with liners cover liners with a bit of the chocolate mixture place patties on top of that then cover wit more chocolate. Butter Tart Filling:Use your favourite pastry recipe for the shells or cheat like I do and buy the frozen tart shells 1-cup packed brown sugar 1/2-cup corn syrup 6-tbsp butter 2-beaten eggs 2-tsp vanilla 1/4-tsp salt 2-tsp vinegar 1-cup raisins Combine brown sugar, corn syrup, and butterAdd eggs, vanilla, salt, vinegar, and raisinsMix well Fill the pastry shells no more than 2/3 full Bake at 425* for 15-20 minutes
