Our Family Favourite Meatloaf

1/4 cup of bread crumbs ( I use Pastene Italian breadcrumbs)
2 1/2 pounds ground beef
1 medium yellow onion, peeled and diced
2 cloves garlic minced
1/2 teaspoon dried parsley
1 large egg
1 cup ketchup (half for the meat loaf the other half is for the sauce)
3 teaspoons mustard (I use French's Bold 'n Spicy Deli Mustard) (2 for the meatloaf 1 for the sauce)
1 teaspoon coarse salt
2 teaspoons freshly ground black pepper
6 slices of bacon( the thinner the better)
2 tablespoons brown sugar

Heat oven to 350 degrees.
place the ground beef, and bread crumbs in a large bowl
add onion, garlic and parsley to meat mixture, using hands to mix well. Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; use hands to combine thoroughly. Place in a loaf pan.
Wrap the bacon around the loaf and tuck ends under the bottom of the loaf.

Sauce-
Combine remaining 1/2 cup ketchup, 1 teaspoon dry mustard, and brown sugar in a bowl; stir until smooth.
Brush mixture over meatloaf. Place in oven, with a baking pan set on the rack below to catch drippings. Cook about 70 minutes. If top gets too dark, cover with foil, and continue baking.
