Cafe Mocha!!

This is just something quick to warm up your day! Cafe Mocha 3/4 tsp of instant coffee 5 1/2 tsp instant hot chocolate 1 1/2 cups boiling water splash of milk Mix coffee and hot chocolate in tall mug. Pour in a little bit of water and stir so there is no lumps. Add rest of water and splash of milk, stir again. Top with lots of whip cream! You don't need to follow the directions exactly, experiment!

Birthday Cupcakes

2 cups all purpose flour 1 1/2 cups sugar 3 teaspoons baking powder 1/2 teaspoon salt 4 egg whites from large eggs 1/2 cup shortening 1 cup 2% milk 2 large eggs 1 1/2 teaspoon vanilla Preheat oven to 325 f. Line cupcake pans with paper liners. Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large mixing bowl. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes. Fill liners 2/3 full of batter. Do not overfill. Bake 15 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely. Frost and decorate as desired. Quick Vanilla Buttercream Frosting 3 cups icing sugar 1 cup butter 1 teaspoon vanilla extract 1 to 2 tablespoons milk mix together sugar and butter. Peel and finely grate 1 cup carrots and set aside Preheat oven 350, and line muffin pan In a medium sized bowl combine dry ingredients, 1 1/2 cups of flour 2teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/2 cup brown sugar In a large bowl beat together 1 egg 1/2 cup milk 1/3 cup vegetable oil stir dry ingredients into wet, stir just until moist, fold in carrots, fill tins 2/3 full. bake for 20 minutes
