CUPCAKES (makes 12 regular cupcakes)
1 1/2 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
6 tablespoons (3/4 stick) unsalted butter at room temp
1/2 cup sugar
1 large egg, lightly beaten
1/2 cup milk (any fat content)
COATING
6 tablespoons (3/4 stick) unsalted butter, melted
1/2 cup sugar
1 1/4 teaspoons ground cinnamon
DIRECTIONS
1. Sift flour, baking power, salt, and nutmeg together, set aside.
2. Cream butter and sugar until just blended.
3. Beat in egg until smooth and thick.
4. Add flour mixture in 3 parts and milk in 2, starting and ending with the flour mixture.
5. Fill each lined muffin cup 1/2 full with mixture.
6. Bake ~18 minutes at 350 F or until the tops are firm and an inserted toothpick comes out clean.
7. Let cupcakes cool in the pan, on a cooling rack for about 5 minutes.
8. While waiting for cupcakes to cool, make coating. Put melted butter in a medium bowl. In another medium bowl, stir cinnamon and sugar together.
9. Flip cupcakes onto cooling rack and place them right-side up. Immediately roll them in melted butter, then in the cinnamon sugar to coat it completely.
10. Serve warm or at room temperature.
