Green Tomato Chow Chow

If you go for a walk this time of year anywhere on the Island, you will most likely smell the aroma of Chow- chow and Mustard pickles in the air, Green Tomato Chow Chow 7 lbs. green tomatoes, sliced thinly. 5 medium onions, peeled and sliced thinly . 1/2 c. pickling salt. ********** 4 c.vinegar. 4 c. sugar. 1 teaspoon cinnamon. 1/2 teaspoon ginger 1/4 c. mixed pickling spice tied in a cheesecloth bag. ************ Combine the vegetables and salt in a large bowl. Mix well. Cover and let stand overnight. The next day, drain the vegetables in a colander, pressing out excess moisture. Set aside.  Combine 4 c.vinegar. 4 c. sugar. 1 teaspoon cinnamon 1/2 teaspoon ginger in a large pot. Bring to a boil over medium-high heat. Simmer for 15 minutes. Add the drained vegetables and add the spice bag. Once the mixture returns to a boil, reduce the heat to medium and simmer for 30 minutes, stirring often. Remove from the heat; discard the spice bag. rice krispie squares

I'm sure everyone has made these before The Original recipe, but here's an easier way and without the mess, made in the microwave. 1/4 cup butter 1 pkg(about 40) regular marshmallows or 5 cups miniature 1/2 tspvanilla extract (optional) 6 cups RICE KRISPIES* cereal In a large microwave safe bowl, heat Butter and marshmallows at HIGH for 3 minutes, stirring after 2 minutes. Stir in vanilla. Stir in KELLOGG'S* RICE KRISPIES* cereal until well coated. Using lightly buttered spatula, press into buttered 3.5 L (13 x 9") pan. Allow mixture to cool slightly. Cut into bars.

Strawberry Shortcake

2 cups flour 1/4 cup sugar 4 teaspoons baking powder 1/2 teaspoon salt 1 egg, well beaten 6 tablespoons cold butter 1/3 cup milk 4 cups fresh strawberries, 3/4 cup sugar whipped cream Combine flour, sugar, baking powder, salt. Sift. Work in butter with pastry blender add egg and milk. Mix just until dough is moist. Turn dough into a floured surface knead lightly 8 times or so. roll out and cut with a large biscuit cutter. Bake for about 12 to 15 minutes in a 400° oven, or until golden brown. Prepare strawberries an hour or two before serving. Rinse, hull, and slice 1 quart of fresh strawberries, leaving 8 to 12 whole for garnishing. Place the sliced berries in a bowl; add 3/4 cup sugar and let stand for at least 1 hour at room temperature. Put layers together with strawberries and their juice between the layers and on top. Garnish with several whole berries and serve with whipped cream.

ECSTASY-IN-A-PAN

1/2 cup finely chopped pecans 1 cup flour 1/2 cup butter or margarine 1 (8oz) package cream cheese, softened 1 cup icing sugar 1 tub whipped topping, 32 ounces 1 package (4oz) vanilla instant pudding 1 package (4oz) chocolate instant pudding 2 1/2 cups cold milk Preparation:Combine flour, butter and pecans and press into a 9x13x2-inch baking pan. Bake at 350° for 20 minutes. Cool in pan on rack. Combine cream cheese and icing sugar and spread over cooled pecan mixture. Spread half of the whipped topping over the cream cheese layer. Mix package of vanilla pudding using 1-1/4 cups of milk. Spoon evenly over the whipped topping; spread until layer is even. Mix package of chocolate pudding using remaining 1-1/4 cups milk. Spread on top of vanilla pudding. Spread remaining whipped topping on top and sprinkle with shaved chocolate or mini chocolate chips. from Linda's kitchen

Noodle Salad

Noodle Salad 1 Bag coleslaw. 1 Veg. Mr.Noodle pkg. Slivered almonds. 1/3 cup oil 1 Tbsp. soy sauce 1 Tbsp. sugar packet of seasoning mix from the noodles. Mix together coleslaw, noodles and almonds. Mix together the oil, soy sauce, sugar, and seasoning in a small bottle and shake to mix together. Just before serving put the dressing in the coleslaw mixture and toss together. The dressing will make everything soggy if mixed too early. You can also omit the sugar in this recipe if so desired Enjoy!!! From Cindy's kitchen

Broccoli Salad

Broccoli Salad 2 bunches Broccoli { cut in bite size pieces } 1 1/2 cups grated cheddar cheese 10 - 12 slices bacon { crisp & crumbled } I use bacon bits 1/2 cup red onion { chopped fine } Dressing: 3/4 cup mayonnaise 1/2 cup white sugar Mix together well. Gradually add 4 tbsp of vinegar. Pour dressing over broccoli mix. Cover and chill at least one hour. Stir again before serving. Enjoy! From Kelli's Mother-in-law Cindy

Taco

1 tablespoon all-purpose flour 1 tablespoon cornstarch 1 tablespoon dried onion flakes 1 teaspoon beef bouillon granules 1 teaspoon garlic salt 1 teaspoon ground cumin 1 teaspoon paprika 1 teaspoon chili powder 1/2 teaspoon onion salt 1/4 teaspoon cayenne pepper 1/4 teaspoon granulated sugar Directions Combine and store in an air-tight container. Notes: To make taco meat, brown 1 lb ground beef in skillet; drain. Add seasoning mix and 3/4 cup of water. Bring to a boil then reduce heat. Simmer uncovered, 10 minutes, stirring occasionally. I serve mine wrapped in warm flat bread
